Spicy Sausage Pasta

Once upon a time long ago, I had the luxury of cooking a three course meal every night, setting a full table, and decorating my plates with garnish before placing them on my clean linen tablecloth. I could be exaggerating slightly. But I did have the luxury of time.

Now as a busy wife and Mom of three, I’m a self proclaimed connoisseur of quick and easy recipes. With emphasis on the quick and easy. 

When I found this recipe for Spicy Sausage Pasta on  http://www.kevinandamanda.com/spicy-sausage-pasta/  I was really excited to try it. It’s super simple, with a hint of fancy. 

Get ready to make the easiest and most delicious sausage pasta you’ve ever tasted!  Do prepare to be wowed. Do not expect to have leftovers.  

Here are the ingredient that you’ll need:

Olive oil 

2 garlic cloves minced or 1 tablespoon minced garlic

1-14 oz pack Turkey sausage

2 cups Chicken broth

1-10 oz can Rotel mix

¾ cupHeavy whipping cream

8 oz (1 cup) Bow tie pasta- uncooked

1 cup shredded Colby jack cheese

Cajun seasoning

Cayenne pepper (optional)

*My recipe varies slightly from the original

Directions:

Add about 1 tablespoon of olive oil to a cast iron or an oven-safe skillet over medium high heat. Add 1 tablespoon of minced garlic to skillet. Use a wooden spoon to cook garlic about one minute or until fragrant.

Slice turkey sausage and add to skillet. Cook until lightly browned on each side – about 4 minutes) Add additional seasoning like Cajun seasoning and cayenne pepper if you desire. Next add broth, rotel mix, ½ cup heavy whipping cream, and dry pasta to the skillet. Stir well. Adjust heat to medium high/high stirring from the bottom. 


Once it begins to boil, cover the skillet and reduce heat to medium-low. Simmer for about 12 minutes or until the pasta is tender.

Remove skillet from heat and stir in ½ cup of cheese. Stir in the remaining whipping cream. Sprinkle the remaining cheese on top. Broil in oven until cheese is melted, brown, and bubbly.

Hobo Packets

I’ve been seeing this recipe all over Facebook and tonight I decided to give it a try. (I used the variation of the recipe found on www.southernplate.com.) I’m really glad that I did and you will be too. My family loved it and it was simple, quick and delicious which happens to be three of my favorite things.

 

Ingredients:

1 Lb hamburger

1 onion

7-10 potatoes (I used Dole red potatoes)

1 bag of Baby Carrots

Dales Seasoning (Or any brand of Steak Seasoning)

*Various seasonings of your choice

Aluminum Foil

Preheat oven to 350. While its warming, wash and cut your onion into round slices. Wash and cut each potato into fourths. Next put hamburger, seasoning salt, garlic salt, and 1 tablespoon of steak seasoning into a bowl. Mix together. Form 6 hamburger patties and set aside.

Place each hamburger patty in the middle of a foil packet. Add potatoes and carrots, (about 5 each) and an onion slice to each packet. Sprinkle seasoning and add 2 tablespoons of steak seasoning. Fold foil packet closed. (Make sure it’s tight.) Put the packets on a baking sheet or in an oven safe pan and place in oven. Cook for 45 minutes – 1 hour depending on how well you like your meat cooked.

*Recipe Tips – This recipe can be made with pork, chicken, or beef. Some recipes  call for butter but I skipped that  ingredient. (I felt like the butter might make the dish oily.) The meat and the steak seasoning make plenty of sauce by themselves.

If you’re not a fan of onions you can skip that ingredient. You can also add more carrots and potatoes to suit your taste. Make sure you seal the foil so the seasoning stays locked in. You’ll know the dish is done when the meat is brown and the potatoes are soft.

Peanut Butter Crunch

The first time I tasted Peanut Butter Crunch I fell in love. Literally. How can something be this good and who came up with this deliciousness? I’ll tell you what, whoever it was, I am forever indebted to them because this desert is pure heaven.

I’m not exaggerating. Every time I make this desert my husband and my kids go crazy, which pretty much makes me feel like a superstar chef. There’s just something about their sweet crunchy taste that makes everyone go nuts.

Just wait until you taste them, you’ll see what I mean.

This recipe is pretty simple to make which happens to be one of the many things I love about it. You can use all generic ingredients so it’s pretty cheap to make. I like to use an aliminum pan for easy clean up but you can use any type of  baking pan or these can be dropped onto wax paper. Make sure to spray your spoon and pan with non-stick cooking spray. Also, I like to crunch up my cornflakes a bit before I put them in the pan.

Ingredients:
1 (8 oz.) cup of sugar
1 ½ cups of peanut butter 1 cup                                                                                                                 (8 oz.) of Karo light corn syrup
6 cups Corn Flakes Cereal
*If you’d like it to be more crunchy add 8 cups of cornflakes

Directions:
Pour Karo syrup and sugar into a pot. Stir together. Bring to a boil. Boil until clear and bubbly. (About 60 seconds) Remove from heat and mix in peanut butter. Stir. Fold into (pour on top) corn flakes. Press down with a buttered wooden spoon. Cool, cut, and indulge in a little piece of heaven. You’re welcome.
