So imagine that Pizza and Pasta got married and had a baby. The result: Pizza Casserole! It’s so delicious. It can be served as a main dish all by itself, or with salad and bread, and it stretches so unless you have a really large family there will be leftovers! (Not many though)
As I’ve mentioned before, my 7 year old is an extremely picky eater. As far as he’s concerned, everything that I cook is pretty much gross. And I’m a great cook!
Now I could waste my time and be offended by his aversion to everything I cook, or I can make this casserole which has a full serving of veggies plus hidden veggies inside!
If you’re not a fan of hamburger you can substitute with sausage or ground turkey, or you can skip the meat all together. The cheese can also be interchanged with your favorite cheese and you can even change the type of noodles.
Pretty versatile, right? That’s one of the things I love about it. You can easily make it your own!
So without further ado, here is the recipe. You’ll need just the following ingredients:
1 lb ground beef
1 (16oz) bag cheddar cheese
1 (16 oz) bad mozzarella cheese
2 (24 oz) jars of garden vegetable spaghetti sauce
1 (3.5 oz) bag pepperoni
1 (16 oz) bag/box rotini pasta
Spray a medium to large baking dish with cooking spray and set aside. Bring 1 quart of water to a rolling boil, add pasta, and cook about 6-8 minutes or until al dente. (Firm to the bite) Drain and set aside.
**Quick Tip-If you cook your pasta too long, it will very soft and mushy after its baked. For this dish, firm is best.**
Add both jars of spaghetti sauce to a pot and turn to medium-low. Make sure to stir so that it doesn’t stick to the bottom of the pan. While the sauce is warming, put your ground beef in a fryer. Add 1 cup of water (to help drain fat), garlic seasoning, seasoning salt, and a pinch of pepper. Cook on medium heat until brown and crumbly.
Drain and add to sauce.
Using a large spoon, spread a thin layer of spaghetti sauce in your baking dish. Next add a layer of noodles. Spread 1 cup of sauce on top of the noodles. Sprinkle 1 cup of cheddar and 1 cup of mozzarella. Top with pepperoni.
Cover with foil. Bake at 375 degrees for 30 minutes or until cheese is completed melted.
Remove foil and Broil for 1 -2 minutes or until cheese is golden brown. (Make sure to keep an eye out so it doesn’t burn)
Remove, cool, and Enjoy!
